Shell Pasta Minestrone Soup

Ingredients

40 gms Legador small shell pasta
1 can tomatoes, diced & peeled
3 potatoes, peeled & cubed
200 gms pumpkin, deseeded, peeled, cubed
1 large red onion, chopped
2 carrots, chopped
2 large zucchini, chopped
2 celery sticks with leaves, chopped
1 large garlic clove, chopped
1 tsp dried oregano leaves
7 cups water
1 can red beans, rinsed & drained
½ cup fresh parsley, chopped
1½ tbsp extra virgin olive oil
black pepper to taste, freshly ground

Instructions

1. Place the tomatoes, potatoes, pumpkin, onion, carrots, celery, garlic and oregano in a large saucepan.
2. Stir in the water and bring to boil over medium-high heat. Reduce heat to medium and cook, almost covered till tender.
3. Add the zucchini and macaroni, and cook, stirring occasionally, for 8-10 minutes. Stir in the beans and cook until the zucchini and pasta are tender.
4. Stir in the parsley and season with salt and pepper. Ladle into serving bowls. Drizzle with olive oil, and serve immediately.
