Lemon Cheesecake

Ingredients

Four Legador Digestive biscuits

A spoon of melted butter

200 grams cream cheese (at room temperature)

200 grams of cream milk

Sugar to taste

Juice of 2 lemons

Grate a lemon

Instructions

1. In a blender, mash the biscuit with melted butter until it becomes a soft mixture.

2. With the electric or hand beater, the cheese is completely softened until it becomes creamy.

3. Add the milk cream and sugar and continue mixing with the racket.

4. Add the lemon juice and lemon zest and continue mixing with the racket until the mixture is homogeneous, thickens and remains smooth.

5. At the bottom of the serving molds, divide the biscuit quantity with butter and divide over it the amount of the cheese mixture.

6. You can decorate it as desired and leave it in the refrigerator overnight, then serve cold.
