Red beans and corn salad

Ingredients

A pack of legador red beans

Half a packet of sweet corn legador

½ cup (125 ml) olive oil

⅓ cup (80 ml) lemon juice

¼ cup (60 ml) white vinegar

½ cup (100 g) chopped fresh green coriander

2 medium tomatoes, cut into cubes

A red pepper cut into cubes

A small red onion, finely chopped

Clove of crushed garlic

Instructions

1. In a small bowl, put the onion, salt, and vinegar, and stir well, then leave it aside for 15 minutes.

2. Wash the onions well, until you get rid of the vinegar and salt.

3. In a large bowl, put the onions and the rest of the ingredients, stir well, then serve
