Elbow Macaroni & Smoked Tuna

Ingredients

500 gms Legador elbow macaroni
1 can smoked tuna, sliced or shredded
2 medium tomatoes
2 small red onions, sliced in rings
1 tbsp parsely, chopped
1 tsp garlic, minced
4 tbsp barbeque sauce
4½ tbsp olive oil
black pepper to taste, freshly ground
salt to taste

Instructions

1. Bring a large pan of water to boil with one tsp olive oil, add macaroni and cook till tender. Drain and rinse under cold water.
2. In a pan heat 2 tbsp oil and saute macaroni, till slighlty brown. Saute very gently, as it is very tender.
3. Heat 2 tbsp oil in a wok, add garlic and saute till golden brown. Add tuna slices, continue to saute till golden. Remove from wok.
4. Add bbq sauce and let it simmer for a minute
5. Now add macaroni, tomato and onion rings. With a fork mix well and add tuna in the end, adjust seasoning with salt and pepper. Garnish with parsley and serve hot.
