Broad Beans with sunny side up eggs

Ingredients

A pack of fava beans legador

Small spoon of salt.

A tomato, cut into small squares.

Two tablespoons of olive oil.

Spoon of Legador vegetable ghee

Juice of half a lemon.

Tahini spoon.

Four eggs of medium size.

Instructions

1. Put the beans in a frying pan on the stove, then add salt and lemon juice to it and stir well while keeping the shape of the grains from mashing.

2. Add the tomato pieces to the beans with gentle stirring.

3. Leave the beans on a low heat until it boils, then add the tahini in a bowl with olive oil and stir them until the mixture is well combined.

4. Add the mixture to the beans, then spread the beans evenly in the pan, then place the ghee on the face, so that it becomes extended over the entire face.

5. Place the eggs over the beans so that they maintain the shape of the yolk together, and each egg is far from the other, to form a full layer of eggs on the face of the beans, then spray the face with a little salt, and cover the pan for five minutes on a low heat until the eggs are fully cooked.

6. Serve the Beans & egg dish hot, and garnish with some sumac.
